Brinjal Tamarind Koottu

Eggplant tamarind curry, Brinjal gravy

Ingredients:

  • Brinjal – 2 (big)
  • Tamarind – lemon size ball
  • Salt – to taste
  • Turmeric – 1/4 tsp
  • Hing – 1 pinch
  • Oil – 2 tsp
  • Mustard – 1/4 tsp
  • Toor dal -1 tsp
  • Curry leaves 4 to 5
  • Dry red chilli – 2
  • Green chilli – 1

Recipe:

  1. Wash brinjal , wipe water with a cloth then apply oil on it. Heat this directly over the flame till all the sides are roasted well.
  2. Then allow it to cool, now remove skin and check inside the brinjal (for good ones). Then smash the Brinjal.
  3. Heat Tamarind water, add salt & Turmeric to it, wait till bubbles come out of it.
  4. Now add Brinjal to the gravy and bring this to boil once again.
  5. Heat oil in other pan. Add Mustard seeds, Toor dal, Red chili, Green chili, Curry leaves and add this to the gravy.
