Carrot Rice – I

Carrot Rice, Carrot Pulao

Ingredients:

  • Rice – 1 cup
  • Carrot(big) – 2(grated)
  • Cinnamon stick – 1
  • Cloves – 2
  • Onion – 1 medium (finely chopped)
  • Oil – 2 tbsp
  • Salt – to taste

To grind:

  • Coriander seeds- 1 ½ tsp
  • Cumin seeds – 3/4 tsp
  • Dry Chilli – 4
  • Coconut – 1 tbsp (grated)

Recipe:

  1. Steam rice in a cooker and allow it to cool.
  2. Heat oil in a pan. Add Cinnamon stick, Cloves, Onion, saute till raw smell of onion goes.
  3. Add Carrot and fry till raw smell of carrot goes. If necessary, add some water and fry.
  4. Now add Rice, Ground masala items, Salt and mix well. Then remove from heat and serve.

Goes well with: Any fries
