Ingredients:
- Mango(raw) – 2 to 3 cups(peel off and grated)
- Rice(Basmati or Sona masoori) – 1 cup
- Mustard seeds and Urad dal – 1 tspn
- Cumin seeds – 1/2 spoon
- Chana dal(kadalai paruppu) – 2 spoons
- Cashew nuts – 18 to 20
- Green chili – 4 to 6
- Red chili – 2 to 3
- Curry leaves – 1 sprig
- Hing – a pinch
- Turmeric powder – 1/4 tspn
- Salt – to taste
- Oil – 4 to 6 spoons(as required)
Recipe:
- Cook Rice and keep it aside. If you use basmati Rice, then use 1.5 cups of water for each cup of rice. For Sona masoori rice, use 2 cups of water for each cup of rice.
- Heat Oil in a pan. Add Mustard seeds, Urad dal and Cumin seeds. Once Cumin and Mustard seeds splutters, add Chana dal and Cashew nuts, fry till it turns into light brown color.
- Add Green chilies, Red chilies and Curry leaves. Fry for 2 minutes.
- Add Hing,Turmeric powder and Salt, fry for 2 minutes.
- Add the grated raw Mango to it and mix well with the other ingredients for 2 minutes. Do not cook Mango more than that.
- Finally add cooked Rice to it and mix well. Remove from heat.
