Green Mango Rice

Green mango rice, Mangai sadham

Ingredients:

  • Mango(raw) – 2 to 3 cups(peel off and grated)
  • Rice(Basmati or Sona masoori) – 1 cup
  • Mustard seeds and Urad dal – 1 tspn
  • Cumin seeds – 1/2 spoon
  • Chana dal(kadalai paruppu) – 2 spoons
  • Cashew nuts – 18 to 20
  • Green chili – 4 to 6
  • Red chili – 2 to 3
  • Curry leaves – 1 sprig
  • Hing – a pinch
  • Turmeric powder – 1/4 tspn
  • Salt – to taste
  • Oil – 4 to 6 spoons(as required)

Recipe:

  1. Cook Rice and keep it aside. If you use basmati Rice, then use 1.5 cups of water for each cup of rice. For Sona masoori rice, use 2 cups of water for each cup of rice.
  2. Heat Oil in a pan. Add Mustard seeds, Urad dal and Cumin seeds. Once Cumin and Mustard seeds splutters, add Chana dal and Cashew nuts, fry till it turns into light brown color.
  3. Add Green chilies, Red chilies and Curry leaves. Fry for 2 minutes.
  4. Add Hing,Turmeric powder and Salt, fry for 2 minutes.
  5. Add the grated raw Mango to it and mix well with the other ingredients for 2 minutes. Do not cook Mango more than that.
  6. Finally add cooked Rice to it and mix well. Remove from heat.
