Scrambled Paneer

Paneer bhurji, Scrambled paneer, Cottage cheese fry

Ingredients:

  • Paneer – 1 cup (crumbled)
  • Mustard seeds and Urad dal – 1/2 tspn
  • Cumin seeds – 1/2 tspn
  • Curry leaves – 1 sprig
  • Green chili – 1
  • Onion – 1 (small, finely chopped)
  • Tomato – 1 (finely chopped)
  • Turmeric powder – 1/4 tspn
  • Chili powder – 1/2 tspn
  • Cumin powder – 3/4 tspn
  • Salt – to taste
  • Oil – 1 or 2 tspn
  • Coriander leaves – 2 to 3 sprigs (finely chopped)

Recipe:

  1. Heat Oil in a pan. Add Mustard seeds, Urad dal and Cumin seeds. Once the seeds starts spluttering, add Curry leaves and Green chili, fry for a minute.
  2. Add Onion and fry till they are transparent.
  3. Add Tomato and fry till it melts.
  4. Add Turmeric powder, Chili powder, Cumin powder and fry for a minute.
  5. Sprinkle little water and Salt. Fry for a minute.
  6. Add crumbled Paneer, mix well and cook for 2 minutes.
  7. Add Coriander leaves and remove from heat.

Goes well with: Chapati, Bread
