Puffs – Veg, Egg and Sweet

Puffs - Vegetable puff, Egg curry puff, Sweet (Jaggery and Coconut) puffs

Ingredients:

  • Puff pastry sheet – 1 
  • Butter – to grease the baking pan

Vegetable stuffing:

  • Potato – 1 (small) 
  • Onion – 1/2 (finely chopped)
  • Green Chili – 1 (finely chopped)
  • Turmeric powder, Chili powder, Cumin powder, Garam masala powder – 1/4 tspn each
  • Coriander leaves – 2 sprigs
  • Salt – to taste
  • Oil – 1 tspn

Egg Stuffing:

  • Egg – 1 (hard boiled) 
  • Onion – 1/2 (sliced lenght-wise)
  • Ginger garlic paste, Turmeric powder, Chili powder, Cumin powder, Garam masala powder – 1/4 tspn each
  • Coriander leaves – 2 sprigs
  • Salt and Oil

Sweet Stuffing:

  • Coconut (fresh or frozen) – 1/2 cup (grated)
  • Jaggery – 1/4 cup (grated)

Recipe:

  1. Vegetable Stuffing: Cook Potatoes with little salt till they are tender, then mash it coarsely. Heat a tspn of Oil in a pan. Add Green Chili, Onion and saute till light brown. Then add mashed Potatoes, all the masala powders and Salt, saute it for 2 to 3 minutes. Finally add chopped coriander leaves and remove from heat.
  2. Egg Stuffing: Hard boil eggs with little Salt for 15 to 20 minutes. Then remove the shell and cut them into two halves. Heat a tspn of Oil in a pan. Add sliced Onion and saute till light brown. Then add Ginger garlic paste and saute till the raw smell goes. Add all the masala powders and Salt, saute this for 1 or 2 minutes. Then add sliced Egg and Coriander leaves, mix well with the masala and remove from heat.
  3. Sweet Stuffing: Heat Jaggery with a tspn of water in a pan. Once the Jaggery is dissolved in water, add grated coconut, stir till it becomes little thick and then remove from heat.
  4. Place the pastry sheet in room temperature for at least 30 minutes before you start using. Preheat the oven to 400 degrees Fahrenheit.
  5. Roll the pastry sheet to make it thin and then cut it into 4 equal sized sheets. Once these stuffing cool completely, place the stuffing at one half of each sheet, fold it in the middle and seal the edges with little water. Make sure that you seal the edges properly. Or else the stuffing may come out of the sheet. Make all the puffs ready.
  6. Grease the baking pan with Butter. Arrange these unbaked puffs in the baking pan and then place the baking pan in the middle rack of the oven for 15 – 20 minutes or till golden brown.

Note:

  • The measurement for each stuffing given here is for 1 or 2 puffs only.
  • Puff Pastry sheets are available in frozen section of super markets.
