Vegetable biriyani

Ingredients:

  • Jeera rice- 1 ½ cups
  • Carrot- 2
  • Beans- 10
  • Coriander leaves- 3/4 cup
  • Mint leaves- 3/4 cup
  • Cloves – 3
  • Cardamom – 3
  • Cinnamon – three 1inch sticks
  • Coriander powder – 1 tsp
  • Chili powder – 1 tsp
  • Green chili – 2 (big)
  • Coconut Milk- 1 ½ cups
  • Lemon- 1/4
  • Water- 1 ½ cups
  • Ghee- to taste
  • Oil and Salt- as required

For semi-grind:

  • Onion- 1
  • Garlic- 10

For fine grind:

  • Corinader leaves- 1/4 cup
  • Mint leaves- 1/4 cup
  • Cloves- 3
  • Cardamom- 3
  • Cinnamon- three 1inch sticks
  • Green chili – 3 (big)
  • Ginger – equal to garlic

Recipe:

  1. Peel and semi grind Onion and Garlic.
  2. Fine grind Coriander leaves, Mint leaves, Cloves, Cardamom, Cinnamon, Green chili and Ginger.
  3. Heat Ghee and Oil in a pressure cooker. Add Cloves, Cardamom, Cinnamon and Green chili, fry for few seconds.
  4. Add Ground items and fry till the raw smell goes. Then add Semi-ground Onion and Garlic, fry till it turns into slightly brown.
  5. Add Coriander leaves, Mint leaves, Coriander powder and Chili powder, fry for a minute.
  6. Finally add Rice, Coconut milk, Lemon and Water. Cook till its done.
