Ingredients:
- Green gram dal(pasi paruppu) – 3/4 cup
- Zucchini – 1
- Onion – 1 cup (chopped)
- Turmeric powder – 1/4 tspn
- Hing – a pinch
- Masala powder or Chili powder – 1 tspn
- Salt – to taste
- Oil – 1 tspn
For tampering:
- Mustard seeds and Urad dal – 1/2 tspn
- Curry leaves – a sprig
- Oil – 1 tspn
Recipe:
- Cut Zucchini into small pieces. Don’t peel since most of the nutrients are in the skin. Wash the dal in water.
- Mix cut Zucchini, Onion, Green gram dal, Turmeric powder, Hing and Masala powder in a pan with a tspn of oil.
- Add enough water to cook Zucchini and Green gram dal. Cover and cook this on stove top. Check for water once in a while if there is not enough water in green gram dal.
- After the dal is cooked add salt, then do the tampering.
- For tampering: Heat a tspn of oil in a small pan. Add Mustard seeds and Urad dal, once it starts spluttering add curry leaves. Then remove from heat and pour this mix to the dal .
Goes well with: White Rice
Variation: Use any other squash family vegetable(like Bottle gourd, Ridge gourd) instead of Zucchini.
